Here's the rub that I used on the ribs:
SOUTHWESTERN RUB
1 tsp Chili Powder
1 tsp granulated garlic
1 tsp dry mustard (not the mustard seeds)
1/2 tsp Paprika
1/2 tsp ground Coriander
1/2 tsp ground Cumin
BTW, we have a "smokey" paprika from Penzeys that is different than
the more typical Paprika ... it works really well with this rub.
Yesterday's barbecue went really well with lots of compliments from
the guests. Several told me that it had been a long time since
they'd had a "picnic" and grilled food and one joked it was damned
difficult to carry around a grill from one shelter to another. It's
a great experience ... I know that there are sometimes Saturdays
where the Berean Church is looking for other groups to volunteer --
if you'd like to offer it as a service project, let me know.
It usually requires 10-12 volunteers plus you can recruit more to
make cakes etc for dessert.
See you Wednesday -- do you have a start time as yet?
Ooops. Our youngest son was using the computer an hour or so ago and
apparently re-tooled my e-mail settings to add the Issues forum as an
automatic "bcc" recipient on my e-mails. Both this thread and
another one were inadvertently posted to the Issues forum by mistake.
My apologies ... but feel free to use the rub recipe as it really was
great in combination with pork country ribs and applewood chips for
smoking (grin).
